Ingredients
(makes 20)

175g Almond flour
175g Zùsto
½ tsp Xanthan gum
30g Butter
1 Egg
1½ tsp – Cinnamon
1 tsp – ground ginger
½ tsp nutmeg
1½ tsp Maple syrup
½ tsp Vanilla extract
1 tsp Baking powder

❄ Optional Icing ❄
50g Powdered Erythritol or icing sugar
15ml Hot water
¼ Flavouring of choice

Method

▪︎in a large bowl mix together the almond flour, Zùsto, spices, xanthan gum and baking powder.
▪︎In a separate bowl whisk the melted butter, egg and vanilla extract.
▪︎Pour the wet ingredients into the dry and stir until fully combined.
▪︎Wrap the dough in baking paper, chill in the fridge for a couple of hours.
▪︎Once chilled roll dough into 20 small balls.
▪︎Place each ball onto a lined baking tray and gently press down to flatten a little.
▪︎Bake in a pre-heated oven at 160°c for 20mins, they should be cracked and crisp on the outside but still soft in the middle.
▪︎Allow to cool.

❄Icing method❄
▪︎Mix the powdered erythritol/sugar into a thick paste with the hot water and if desired add some flavouring, I used peppermint but lemon or orange would be lovely too.
▪︎with a very small nozzle pipe of a Christmassy design.
