Serves 9

150g Plain flour
2 tbsp Zùsto sugar
1 tsp Baking powder
1/2 tsp Bicarbonate of soda
1 tsp Vanilla extract
175g Ripe bananas
1 tbsp Melted flora light
2 tbsp Clark’s original maple syrup
2 Large eggs
30g Dark chocolate chips

1. Add the flour, baking powder, bicarbonate of soda and Zùsto sugar into a bowl and combine
2. In a separate bowl mash the bananas then add in the melted butter, vanilla extract, maple syrup and the eggs. Whisk all together
3. Fold in the dry ingredients and add 20g of the chocolate chips
4. Line a loaf tin with baking parchment and pour in the mixture, scatter over the other 10g of chocolate chips and sprinkle with a pinch of Zùsto sugar
5. Bake at 180° for 35 minutes
6. Once cooked, let cool then cut 9 slices
