310 grams Zusto (85 grams of Zusto is for the glaze)

225 grams Butter

225 grams Self Raising Flour

2 Teaspoons Baking Powder

4 Eggs

2 Unwaxed Lemons (Finely grated zest only)

How to make the Lemon Drizzle Cake:

  1. Preheat oven 180/160 fan, Gas 4. Grease tin of line with Baking paper
  2. Mix all ingredients in bowl expect Zusto and beat for 2 minutes
  3. After 2 minutes mix in 225 grams of Zusto
  4. Bake for 35-40 Minutes
  5. Make glaze for top mixing (Zusto 85 grams) with juice of 2 lemons
  6. Leave cake to cool for 5 mins then lift out of tin, place on wire rack with baking paper still attached.
  7. Brush the glaze all over the surface of the warm cake & leave to set. Remove baking paper.
