ingredients (for the bars):
60g phdnutrition lemon drizzle Smart whey,
60g oats,
1 medium egg,
1 cup unsweetened almond milk,
2 tsp @zustouk (sugar alternative),
1 level tsp baking powder,
Zest of half a lemon,
3 tbsp fresh lemon juice.
1 tbsp lemon curd,
A few vanilla or white choc flav drops to taste,
Some flaked almonds,
Spray cooking oil.

Ingredients (for the icing):
2 tbsp icing sugar,
1 tbsp fresh lemon juice.

Method:
1. Preheat oven to 180 and take a small high sided baking tray and line it with greaseproof paper. Spray over some cooking oil and set aside.
2. In a mixing bowl add in the oats, whey, lemon zest, baking powder and sugar alternative. Mix together.
3. Make a well in the centre and crack in the egg. Add the milk and flav drops then stir together. Add the lemon juice and stir again.
4. Spoon the batter out into the lined baking tray so it’s even, up to all edges and neat.
5. Dollop over blobs of the lemon curd and then sprinkle over the flaked almonds.
6. Bake at 180 for around 12 minutes or until the top is springy to the touch.
7. Leave to cool for a minute then turn out carefully and peel off the greaseproof paper.
8. Once cooled, mix together the icing ingredients and then drizzle over the bars. Cut into six squares.
