Ingredients

150g Zusto
150g Self raising flour
150g Softened butter or light alternative
3 Eggs
1/2 Teaspoons baking powder, to add lift as we are using the all in one method
One level dessert spoon cocoa powder

For the filling

No added sugar preserve – we would recommend Fruitiful preserve made with Zusto from Waterhouse fayre
Fruit or required decoration

Method

1. Place all ingredients in a bowl and mix together on slow speed to start for approx 2 mins until the mixture is a smooth batter
2. Divide between 3 tins
3. Bake in the oven for around 15- 20 mins 190 C fan / 170C / gas 5
4. Leave to cool for a couple of minutes before turning out
5. Layer the sponge together with jam
6. Decorate as required
