Zùsto Blueberry Muffins by Victoria Foulger
100g unsalted butter melted
2 large eggs
140g natural yogurt
1 tsp vanilla extract
2 tbsp milk
250g plain flour
2 tsp baking powder
1 tsp bicarbonate of soda
125g pack blueberries
1. Combine the dry ingredients in one bowl & the wet ingredients in another bowl.
2. Mix the two together until smooth then add the blueberries (tossing the blueberries in a little flour at this stage helps prevent them falling to the bottom of the muffins).
3. Pour the mixture into 6 large or 12 small muffin cases & bake in a preheated oven (200°C/180°C fan/gas 6) for 5 minutes.
4. Reduce the temperature to 180°C/160°C fan/gas 4 and bake for 15-18 mins more until risen and golden, and a skewer inserted into the centre comes out clean.
